How to light a bonfire and make S'mores!

My husband Ian loves a good fire...it's the boy scout in him.  The practice of setting a fire, gently coaxing a flame from the kindling then feeding the fire until it blazes, fills him with a deep satisfaction.  So when we received a Certainly Wood fire starter kit, he was very excited at the prospect of having a lovely fire to accompany an outdoor summer evening. As for the kids, they were excited at the prospect of making S'mores!

The fire starter kit contained everything we needed for the perfect fire - three natural wooden fire lighters called Flamers, matches, kiln dried kindling and split logs plus an instruction leaflet.  We used our barbecue as a base for our fire.  All the firewood from Certainly Wood is sourced from sustainable, British forests, where the process used is carbon neutral and environmentally friendly.

The Flamers are twists of natural wood dipped in wax making them convenient to use, green and clean. They went up a treat and were so much nicer to use than the nasty paraffin fire lighters, being natural, long burning and odourless.  The kindling and the logs were very dry and easy to burn, and very quickly we had a roaring fire.  Seeing the logs ablaze is such a pleasing sight and the smell of pure, burning, aromatic wood was something quite special.

Flamers are perfect for starting fires in chimineas, wood stoves, barbecues or  fire pits and make the job so very easy.

When you have a fire, Smores must be on the menu.  We also received marshmallows, chocolate and chocolate digestive biscuits along with an instruction sheet on making the perfect S'more.  S'mores are really popular in America, and we were keen to try our hand at making these campfire favourites ourselves.

Popping a marshmallow onto a bamboo skewer, you can safely hold it in the flames.  The length of time you hold it in the fire is a personal preference, but making it blackened and burning seemed to be the kids perfect level of toastedness!  Blowing out the smouldering confection leaves a gooey, runny marshmallow centre which you then squeeze between two biscuits and a square of chocolate.  The heat of the molten marshmallow melts the chocolate to create an indulgent treat.  We made a dairy free version for Megan by opening up Oreos and popping a toasted marshmallow in the middle.  It worked really well.

It was such a lovely activity for us to do as a family.  I enjoyed sitting outside, warmed by the fire, sipping a glass of red as I watched the children having fun making and eating smores.  It's definitely something we will do again!  It'd make a great autumnal activity,  ideal for Halloween or Bonfire Night parties.

Attractions of Snowdonia - Our Welsh Roadtrip

Living in North Shropshire, means we are lucky enough to have Wales close by, allowing us to enjoy day trips to the beautiful area of Snowdonia National Park.  So, when Attractions of Snowdonia asked us if we wanted to enjoy a big day out, visiting some of the 27 different attractions in the area, we were excited to take up their challenge.  We were sent Deri the roaming Welsh dragon, who is the mascot of the Attractions of Snowdonia, to accompany us on our roadtrip.

Our first port of call was the Sygun Copper Mine, a self guided audio visual tour that allows you to explore the old workings of a Victorian Copper Mine on foot.  You have to walk through narrow passageways with low, uneven ceilings, so hard hats are a must!  But this gave us an opportunity for a hard hat family selfie before we entered the mine.

Inside, you can discover the large colourful chambers and see stalactites and stalagmites which have formed over the years.  Pressing buttons along the route activates the audio part of the tour as you learn about how things used to be for the miners who worked in the mines prior to 1903, when it was abandoned. Lighting and sound effects add to the experience.  The Sygun Copper Mine brings the industrial heritage of the area to life and teaches visitors about the history and the science of copper mining.

The mine experience is definitely not for the claustrophobic or fainthearted and you have to be pretty fit to negotiate the low, narrow tunnels and the 176 metal gridded stairs that take you from the mine up into the mountain walk, where there are some amazing views.  Sensible footwear is a must as the floor is wet and uneven in places.  I confess to banging my head on the roof about six times...a problem with being almost 6 foot tall in a confined space...but the hard hat meant I didn't hurt myself!  The kids really enjoyed it and it unleashed little Freddy's sense of adventure and curiosity.  The dark did not phase him at all and the constant 9 degree temperature was not too chilly. The walk takes about 40 minutes to complete and really was quite an adventure!

Above ground there is a mountain walk, gold panning (extra charge applies), adventure playground, lakeside walks, metal detecting and a small museum of antiquities.  There is a also a shop.

Our next stop was the Slate Caverns at Llechwedd.  The journey took us across the mountains and it was beautiful, but took quite a long time because of the windy, narrow roads.  When we arrived the car park was full as it is a really popular venue with its underground adventure zone, subterranean ropes course and zip wires. We were directed to an overflow car park which was a few minutes walk away from the site.

 We were there to experience the new underground tour of the spectacular slate caverns.

On arrival we stopped for lunch.  There wasn't much provision for vegetarians, so we ended up with a small cone of chips each, which were quite pricey at £2.50.  They were good chips though, and the cafe was nice and clean. Freddy had a kids' lunch box with a cheese sandwich, a yogurt, a drink and a flapjack.  We visited the Victorian Emporium where the kids chose some old fashioned sweets, which were sold by the 2 oz bag.

We then headed to the queue for the underground tour.  It didn't seem too busy but we were waiting an hour to get on board the little cable train that would take us to 500 feet below ground.  Trains run every fifteen minutes.

While we waited, we were given hard hats...definitely the dress code for the day!

The cable train down is very cramped and a tight fit in the steep tunnel.  Again...not one for the claustrophobic.  But it only takes a couple of minutes to get down into the caverns, where you are taken on a guided tour by a guide dressed as a Victorian.  They lead you through passageways that open up into huge caverns, telling you the story of a family who worked the mines back in Victorian times. You hear the story of Sion Dolgarregdu who went to learn how to dig for slate with his father. It was really interesting to learn that children as young as 12 were taken on as apprentices to work in the dark, dangerous mines.  The success of the mining industry created a boom town and the community grew, but the job remained incredibly dangerous with many men dying on the job or from silicosis years later. 

The guide demonstrated how the miners used their tools and at one point turned off all the lights to show us just how dark it would be for the miners.  After the underground tour there is a demonstration of the ancient skill of slate splitting, but we had to rush on to our next attraction so we missed this part of the tour.

The underground tour takes an hour and includes 61 stairs down and 70 stairs up and half a mile of walking, so you need to be fit enough to do it.  Although there were some low ceilings in the passages, I didn't hit my head once! The kids really enjoyed it and Freddy said it was "really awesome".  He never lost interest at all, which shows just how interesting the tour was.

My favourite part was the huge and beautiful chamber that included an underground lake.  It was breathtaking and I wasn't surprised to hear that it can be used as a wedding venue  - it is the deepest place licenced for marriage in the Guinness Book of Records!  Although 500 feet underground, the caverns felt airy and were so spacious that I didn't feel at all confined (although the train made me feel like a sardine in a can!)

We then headed to Llanberis to board a steam train on the Lake Railway that runs alongside Lake Padarn at the foot of Snowdonia.  Time was running short (because of our wait at the Slate Caverns) but we just made it to the ticket office to book ourselves onto the final train of the day at 4.10pm. The 5 mile return journey takes about an hour and follows the old 1845 slate railway route.

We were lucky enough to visit on one of the days of the Teddy Bear's Picnic event, which meant the kids received a mini picnic to eat on board the train and there were some teddy themed things going on at the stations. There were lots of teddies on display and there was an opportunity to have your photo taken with a teddy character. Even the steam engine driver was dressed as a teddy bear, much to the kids' amusement.

It was a lovely leisurely way to end the day, enjoying the peace and tranquility of the countryside and looking at the beautiful views outside.  It was fun to watch the vintage steam engine chugging alongside us at the end of the line to hitch itself up to the other end of the coaches and take us back to the station...especially as it was being driven by a rather sooty giant teddy bear!

As it was the last train of the day, the station shops were closing so we didn't get to check them out.  The Llanberis Lakeside Railway is a nice excursion for little train enthusiasts to enjoy and they do events all year round to add to the fun!

Unfortunately we ran out of time before we could visit our last attraction of the day, which was the beautiful Plas Cadnant Hidden Gardens in Anglesey.  They closed at 5pm and we didn't get back to Llanberis until 5.10pm.  Such a pity, but we had been on the go from arriving at 10am and simply ran short of time.  This just goes to show how much there is to do in Snowdonia and  how much fun the attractions are.  We didn't even have time to stop off at any of the towns...we had hoped to pop into Porthmadog for an ice cream at Cadwallader's but didn't have time for that either.  We will definitely return at a later date, and now I know how much the kids loved the attractions we'll organise more days out like this one!  Who knew how much Freddy would love going underground!

Tasty Taco Sandwich Recipe #crispsarnieweek

Tots 100 and Seabrook Crisps have been celebrating National Sarnie Week by challenging bloggers to invent their own recipe for a sandwich featuring crisps!

So, I've been putting on my thinking cap in order to come up with my own idea, which incorporates Seabrook crips.  Although I'm vegetarian, I must confess to enjoying steak flavoured crisps.  Given that many meaty crisps are actually 100% veggie friendly, I can enjoy the savoury taste without compromising on my beliefs.  Seabrook Crinkle Cut Beefy Crisps are one such vegetarian friendly variety, and it is this meaty taste and crunchy texture that inspired me to invent the Tasty Taco Sandwich!!  A easy to make, vegetarian take on a Mexican favourite.

Taco Sandwich Ingredients
(makes one sarnie)

2 slices of bread
half a small tin of spicy refried beans
teaspoon of chilli jam or relish
handful of grated cheese
half a bag of Seabrook Beefy Crisps

Spread the refried beans straight onto one of the slices of bread.

Spread the spicy relish onto the other piece of bread.

Grate the cheese onto the beans.

Put half a bag of Seabrook Beefy Crisps on top of the grated cheese.

Put the other piece on top and cut in half diagonally (is it just me, or do diagonally cut sandwiches just taste so much better??)

Enjoy the textures and tastes of a delicious Mexican taco!  You have the succulent and seasoned refried beans, the spicy kick of the chilli relish, the comforting flavour of Cheddar cheese and the meatiness of the Beefy crisps along with their taco like crunchy texture.  It worked really 

Even though I say so myself, it was genius...and much easier to eat than a regular taco!  The refried beans make a really delicious veggie pate.  I'll definitely use them as a sandwich filling in the future.

Making Packed Lunches Fun with Capri-Sun Fruit Crush Juice Drink

We have had a wonderful summer this year, enjoying a brilliant holiday, lots of fun days out and some quality family time spent together. I can't believe that the summer holidays have come to an end and my children will be returning to school tomorrow for the new academic year.  The new school year also means a return to packed lunch making and trying to make the children's mid day meals as appetising and exciting as possible. Coming up with lunchbox ideas that the kids want to eat can be a challenge, but is also an opportunity to give the children healthy lunchboxes that they will love, scoring lots of mummy points in the process!

We went to our local Tesco Extra at the weekend, to stock up on the things needed for the new term. We picked up some last minute school uniform bits as well as some stationery items.  Packed lunch groceries were also on the shopping list.  We went to the drink aisle to get some long life juice drinks and were pleased to find Capri-Sun Fruit Crush on special offer as part of a back to school promotion, at just £1.32 for a five pack.  We bought both Tropical and Blackcurrant and Apple varieties (they also do an Apple and Pear flavour) so the children can have a choice of which flavour they want each day.

Freddy is quite a fussy eater so I try extra hard to provide him with food and drink that he will really enjoy, which is balanced and (mostly) healthy.  Capri-Sun Fruit Crush is definitely a great choice.  He loves the fun pouches with the straws and the fruity flavours really appeal to him!  Best of all from my perspective, is the fact that they are made from 75% fruit juice and 25% spring water and count as one of their five a day. They are also 100% compliant with the new school's Food Standards.

Another fabulous thing with Capri-Sun pouches is that you can pop them in the freezer and put them in a lunchbox frozen.  This keeps the food cool and fresh.  Plus as they defrost, with a few squeezes of the pouch, they turn into yummy chilled slushies.  Definitely a treat for Freddy who absolutely LOVES this!

Ever since my eldest son Joe started school in 1993, I have been making kid friendly packed lunches.  I used to make little sandwiches using shaped cookie cutters and cut cheese and fruit into bite sized pieces.  In hindsight I think I was making Bento lunches long before it became the trendy thing for mums to do!  We called them "bits and bobs" lunches though. Making food visually appealing and preparing it in small portions makes it so much easier for little ones to tackle. Over twenty years later, and my lunchbox skills are still in demand!

I thought it was a good idea to have a trial run, making a midday meal for Freddy to get him back into the idea of having a packed lunch. Making a packed lunch around the Capri-Sun Fruit Crush, I thought that a summery theme would be fun and seasonal. So, I used small cutters shaped like a leaf, a butterfly, an apple, a flower and a berry, to make bitesize sandwiches (and cookie bites which were cut from a large white chocolate cookie - everyone deserves a little treat).  The sandwiches were filled with cheese spread and sliced grapes. I cut a flower shape from the red wax on a Babybel and made the stem and leaves from a green grape. Not only does this look cute, it also makes it easier for little hands to open the cheese.  A fruit salad comprising of red grapes, melon and mango accompanied the lunch.  Freddy loved it and the little mouth size shapes went down a treat, as did the Capri-Sun Fruit Crush juice drink!

Hopefully, the children will enjoy their packed lunches at school this year and will eat everything up, and I won't have to worry about my little babies going hungry or thirsty during the school day!

It's particularly reassuring to know that fussy little Freddy loves his "bits and bobs" lunches and his Capri-Sun Fruit Crush pouches. I'm going to miss my children when they are back at school, but at least I know they will be well fed.

Freddy was absolutely thrilled by the fact he could activate the light by clapping twice.  He thought it was brilliant!  Once on, the light glows for two minutes before turning itself off.  This makes it a perfect night light to give a child the security and comfort needed to fall asleep independently.

The necklaces are made my attaching clasps onto a length of cord and then attaching feathers and beads using the jump rings.  Kizzy did encounter a problem in that no matter how hard she tried, she could not thread the little plastic beads onto the cord threads, but other than that, she found it easy to follow the instructions and attach the clasps and feathers to make a pretty necklace.

Milkshake! Stars DVD Review

Freddy loves watching some of his favourite TV shows to relax after a day at school , so the new Milkshake! Stars DVD is perfect for him.  With episodes from favourite shows such as Peppa Pig, Ben and Holly, Thomas and Friends, Tickety Toc, Jelly Jamm and Chloe's Closet, there is 149 minutes of fantastic fun for kids to watch and enjoy. They can dip in and pick favourite episodes to watch or can watch the DVD in its entirety, especially useful on long car journeys or when away on holiday to keep little ones entertained.

Freddy is a big fan of the show Igam Ogam about a little cavegirl and her adventures.  The episode "I'm Bouncing" sees her on a veggie hopper that won't stop bouncing about.  It really makes Fred giggle!  Other favourites of his from the DVD are the Peppa Pig episode where George loses Mr Dinosaur and "Fun and Games" with Ben and Holly.  Altogether there are 15 full episodes from 15 different Milkshake! shows on the disc.  Freddy discovered some brand new things like Bert and Ernie and Pip Ahoy! as well as enjoying some old favourites.  It's a great value DVD, perfect for keeping little ones entertained.  At the moment you can pre-order it at Amazon for just £7.00.

Get Your Skills on with Fruit Shoot

We had a fantastic time taking part in the Fruit Shoot #GetYourSkillsOn challenge this summer.  The children learned some new skills and polished up on some old ones. Mostly though, they had masses of fun together, getting exercise and fresh air.  It doesn't have to cost a lot of money and it doesn't necessarily need specialist equipment for your kids to get their skills on.  Simple things like balls, skipping ropes, frisbees and bats are great props to get the kids trying out new skills.  Dancing, cycling or trampolining can challenge little ones to try something new. 

This summer Freddy has mastered the art of frisbee throwing and catching, kite flying and hula hooping.  These achievements have made him so proud and have boosted his confidence in his ability.  He has also decided that he wants to go to street dance lessons. Challenging children to try new things and watching their delight in learning new skills is a wonderful experience.  It helps with their physical development, balance and co-ordination, and increases levels of fitness.  It helps them grow and develop in so many ways.

Old School Fun for a New Generation!

I remember the days of the iconic Panda Pops: the brightly coloured, fruit flavoured, fizzy drinks for kids, always served at school discos. A real blast from the past.  Nowadays, as our demand for healthier options for our kids has increased, Panda has evolved to bring its brand to a whole new generation of children. As well as bringing their fruity drinks to a new generation of children, Panda also want to reintroduce some traditional, childhood games back into their lives : getting kids away from their technological devices, getting them active and having some good old fashioned fun!

With games such a kerby, hopscotch, piggy in the middle, blind man's bluff, conkers and tig, along with skills such as hula hooping, skipping and den building, the kids of today could learn a lot of great activities by looking at the things their parents used to do.

Freddy and Kizzy took the challenge to play one of the old school games and decided to learn how to hula hoop. I bought them some new hula hoops and they practiced hard.  Both of them can now do it and have lots of fun spinning the hoop and swinging their hips, trying to keep it up for as long as possible.  Freddy has even mastered the double, spinning two hoops at once. I could never do it as a child and however hard I try, I still can't!  I just can't get it, although ironically I have the high score for virtual hula hooping on the Wii Fit!

A Family Day Out at Fordhall Farm Fordfest Music and Beer Festival

We are so lucky to live near to the beautiful Fordhall Farm in North Shropshire.  It is a lovely place where we can go for walks, visit the animals, dine in the tea rooms and breathe in the fresh country air.  Yesterday, they held their annual beer festival, Fordfest.  With live music, local ales and activities to keep all the family entertained, it is a great event.  Plus Ella was invited to play on the acoustic stage in the beer tent!

My nieces were also performing so it was a lovely opportunity to catch up with family.  Ella played beautifully, performing her own arrangements of some of her favourite Killers songs along with an acoustic version of Jason Derula's Wiggle and Iggy Azalea's Fancy!  I just love how engaging Ella's performances are, and her smile and love of playing light up the place.  She gained a new fan who said that she was 'special' and asked for her autograph as he was convinced she will get famous one day!

Freddy and his sisters had a great time trying out the circus skills:  hula hooping, ribbon twirling, plate spinning, stilt walking, diablo and juggling.  It was lovely watching them have so much fun!  I loved the freedom that Freddy had, to run around, try new things and make new friends.

We enjoyed listening to some local bands play on the main stage, we ate veggie burgers and Ian sampled the local ales from Shropshire breweries.  I watched the traditionally rural barrel rolling competition and my niece's boyfriend won the trophy, beating off the competition in a rather ferocious final!  It was a lovely way to spend a Saturday afternoon in the country.

Fordhall Farm continues to be one of our favourite local places and we really enjoyed Fordfest!

From the very moment that your newborn infant is lifted onto your chest in the delivery room, the feel of your child's soft, warm skin against yours, pushes aside all memories of the pain and discomfort of labour.  A cuddle is such a beautiful and magical thing.

Those early days with a baby are wonderful but exhaustingly hard.  Sleepless nights create a tiredness that consumes you mentally and physically, but holding your child in your arms makes it all worthwhile, even at 3am. Snuggling them close and breathing in the scent of your newborn is the perfect reward for the seemingly endless rounds of feeding, changing, burping, bathing and washing that comes with early motherhood. I'll never forget those super soft early cuddles that saw me through those long days of being a new mum.

And as our children grow up, the power of precious cuddles need not diminish.  Clumsy toddler hugs, with chubby arms around your neck and sloppy kisses planted on your face are simply perfect.  Sat together on the sofa, cuddled up watching Peppa Pig is a wonderful way to enjoy some closeness with an otherwise boisterous pre-schooler.  These hugs are all utterly priceless and each and everyone of these beautiful moments can be treasured for a lifetime.  Memories of soft skin and love-filled hugs can see you through even the darkest times.  Sharing that closeness and knowing that you love and are loved in equal measure is, for me, what family is all about.

The time spent with little ones flies by so quickly.  The moments between them being completely dependent on you for their every need to them becoming little people in their own right are fleeting. You can never get back that time, but you can embrace those precious moments and never stop letting your children know just how much they are loved.  However busy you are, you can always find time for a hug.

I have been blessed with five wonderful children and have enjoyed a lifetime of cuddles from each and every one of them.  Freddy is my youngest and my last born child, and I treasure the cuddles he gives me. Now he is at school, the time I spend with him has lessened, but he always gets a kiss and a hug as I say good-bye to him in the classroom. If he wakes up in the night and creeps into bed with us, I enjoy snuggling him up against me, feeling his warmth as he cuddles close.  One day, he won't need to seek out the comfort of mummy and daddy's bed when he wakes up, but while he does, there will always be a place for him between us.

Being close to all of my children, even the grown-up ones, is part of who we are.  We still hug, we still snuggle up to watch a film together, we still enjoy the closeness of a cuddle.  It's no surprise that we enjoy a loving relationship with each other, because even now I still love a cuddle with my own parents and never fail to jump up to give them a hug when I see them.  I love to embrace every moment and let my loved ones know just how treasured they are and just how special a place they hold in my heart.

With my third child, Ella about to fly the nest, I know only too well that our children are ours alone for a very short time.  As they spread their wings and fly, I look at my children with such utter pride and I know that they feel utterly and unconditionally loved, giving them the strength and confidence that they need to forge their own paths in the big wide world.  And I know that however old they are, they will always be hugged and cuddled whenever I see them!  For me, cuddles are not reserved for the littlest members of the family, they are for everyone.

Banana and Date Loaf Recipe

Banana and Date Loaf  is a great recipe for using up over ripe bananas.   So when we were left with a fruit bowl full of brown spotty bananas, it was the perfect choice!  The fruit make the cake so moist and the dates give an indulgent almost fudge-like flavour. A sprinkle of demerara sugar on top gives a crunchy sweet crust that is delicious.

Ingredients

100g Kerrygold* block butter cut into cubes
225g self raising flour
75g golden caster sugar
125g stoned chopped Medjool dates
2 ripe bananas mashed
2 free range eggs
2 tblspn maple syrup
1 tblspn demerara sugar

Method

Line a 2lb loaf tin with a greaseproof paper liner.
Rub butter and flour together.
Stir in caster sugar, dates, banana, beaten eggs and maple syrup to make a soft batter.
Spoon into tin.
Sprinkle demerara sugar over the top.
Cook in a pre-heated oven at GM3 for 1 hour.

Having been vegetarian for 14 years, we have enjoyed discovering many new and interesting whole foods along the way.  One of our latest discoveries is Chia Seeds, a small tasteless seed that can be sprinkled onto cereals or yogurt, used in salads, added to smoothies and shakes, used in porridge or baked into cookies, muffins or bread. I throw a spoonful into many meals I cook to give them a nutritional boost.

One tablespoon of chia provides 100% of your Omega 3 requirement, provides fibre for healthy digestion and also gives a source of sustained energy, vitamins, minerals, anti-oxidants and protein. They are nutrient dense and non-allergenic. The seeds swell up when in contact with a liquid so will swell in your stomach, keeping you feeling fuller for longer (great when you are trying to cut down on calories).  It's no surprise that they have been hailed as a superfood.
